The best vegan waffle recipe that are light, fluffy and crispy. Perfect for a quick and easy week end breakfast or a simple dessert.

Ingredients

- 2 cups almond milk
- 2 tsps. lemon juice
- 4 tbsps. rice bran oil
- 2 tsps. organic vanilla extract
- 2 ¼ cups wholemeal self-raising flour
- 1 tsp cinnamon
- 2 tsps. baking powder
- 2 tbsps. raw sugar
- 1 tsp Himalayan salt
Instructions
- Pre-heat waffle iron.
- Place sugar, flour, cinnamon, salt and baking powder in a large bowl. Mix well and set aside.
- Place vanilla, oil, almond milk and lemon juice in a large bowl. Mix well and set aside.
- Combine the large dry bowl ingredients with the large wet bowl ingredients. Mix well.
- Ladle waffle batter into pre-heated waffle iron. Spread waffle batter gently and evenly.
- Cook waffles until golden brown and crisp. Serve immediately.
Serving suggestion: coconut yoghurt, raspberries, blueberries, strawberries, banana, almond meal, muesli, chia seeds and maple syrup.
