Vegan Tofu Scramble
The perfect vegan tofu scramble recipe that is delicious, fluffy, quick and easy. Even the die-hard scramble egg fans will love this version of an eggless scramble.

Ingredients

- 450g firm tofu
- ½ tsp cumin, coriander & garlic powder
- 1 red onion (small dice)
- 1 tsp turmeric powder
- 1 carrot (skin on, grated)
- 1 tsp Himalayan salt
- 1 potato (skin on, grated)
- ¼ tsp black pepper
- 1 zucchini (grated)
- 4 tbsps. nutritional yeast
- 1 ripe tomato (small dice)
- ¼ cup fresh basil, coriander OR parsley
- 1/3 cup olive oil
Instructions
- Crumble tofu block into a large bowl with hands into a small crumble. Set aside.
- Add nutritional yeast, cumin, coriander, garlic powder, turmeric, salt and pepper to tofu bowl. Mix well and set aside.
- Dice onion and tomato. Set aside.
- Finely slice fresh herb. Set aside.
- Grate carrot, potato and zucchini. Set aside.
- Heat olive oil in a large fry pan. Sauté onion until golden brown.
- Add potato, carrot and zucchini to fry pan and sauté until cooked.
- Remove fry pan from heat and gently fold through tofu crumble, fresh herb and tomato.
- Return fry pan to a low heat and gently stir tofu scramble until heated.
- Serve immediately with toast, sliced avocado, spinach and rocket.
