Vegan Tofu Scramble

The perfect vegan tofu scramble recipe that is delicious, fluffy, quick and easy.  Even the die-hard scramble egg fans will love this version of an eggless scramble.

  • 450g firm tofu
  • ½ tsp cumin, coriander & garlic powder
  • 1 red onion (small dice)                                 
  • 1 tsp turmeric powder
  • 1 carrot (skin on, grated)                               
  • 1 tsp Himalayan salt
  • 1 potato (skin on, grated)                               
  • ¼ tsp black pepper
  • 1 zucchini (grated)                                         
  • 4 tbsps. nutritional yeast
  • 1 ripe tomato (small dice)
  • ¼ cup fresh basil, coriander OR parsley
  • 1/3 cup olive oil


  1. Crumble tofu block into a large bowl with hands into a small crumble.  Set aside.
  2. Add nutritional yeast, cumin, coriander, garlic powder, turmeric, salt and pepper to tofu bowl.  Mix well and set aside.
  3. Dice onion and tomato.  Set aside.
  4. Finely slice fresh herb.  Set aside.
  5. Grate carrot, potato and zucchini.  Set aside.
  6. Heat olive oil in a large fry pan.  Sauté onion until golden brown.
  7. Add potato, carrot and zucchini to fry pan and sauté until cooked.
  8. Remove fry pan from heat and gently fold through tofu crumble, fresh herb and tomato.
  9. Return fry pan to a low heat and gently stir tofu scramble until heated.
  10. Serve immediately with toast, sliced avocado, spinach and rocket.
