Vegan Banana Bread

A classic recipe perfect for the vegan baker.  This banana bread will even fool your non vegan eaters.  If you don’t tell them it’s vegan they will just think it’s a delicious, moist banana bread.

Ingredients

Cake Mixture

  • 6 ripe bananas 
  • 1 cup brown sugar   
  • 3 ½ cups wholemeal self-raising flour      
  • 2 tsps. cinnamon
  • 1 tsp Himalayan salt
  • 4 tsps. organic vanilla extract
  • ½ cup rice bran oil
  • 1 cup almond milk

Cake Topping Mixture

  • 2 tbsps. almond meal
  • 2 tbsps. rolled oats
  • 2 tbsps. brown sugar 

Instructions

  1. Pre-heat oven to 180 degrees Celsius.
  2.  Line a baking tray 30 cm (L) X 23 cm (W) with grease proof paper.
  3. Place raw sugar, flour, cinnamon and salt in a large bowl.  Mix well and set aside.
  4. Place almond meal, brown sugar and rolled oats in a small bowl.  Mix well and set aside (this is the cake topping mixture).
  5. Place vanilla, oil and almond milk in a large bowl.  Mix well and set aside.
  6. Mash banana and add to wet bowl ingredients.  Mix well and set aside.
  7. Combine the large dry bowl ingredients with the large wet bowl ingredients.  Mix well.
  8. Pour cake mixture into lined baking tray.  Spread cake mixture evenly.
  9. Sprinkle top of cake with rolled oats, almond meal and brown sugar (cake topping mixture).
  10. Place in oven and bake for 50 minutes until golden brown or a skewer inserted into the center comes out clean.
  11. VARIATION: Push frozen blueberries into cake batter for a banana and blueberry bread.  Push dark chocolate chips into cake batter for a banana and chocolate bread.

  2. I LOVE THIS!!!! I put the blueberries on top and added sliced fresh banana on top. I will make this again and again and again….
